Preheat your oven to 375°F (190°C).

Rinse the zucchinis and tomatoes, then slice them both into even ½-inch pieces.

Mix the zucchini slices with the olive oil, oregano, basil, garlic, salt, and black pepper in a large bowl.

Grease a baking dish, and arrange the zucchini slices flat. Layer a piece of Gouda cheese on each, then place a tomato slice on top.

Dust the top with Parmesan cheese (optional) and extra black pepper.

Put it in the oven for 20–25 minutes until the cheese is bubbling and nicely melted.

Once baked, take it out and sprinkle with freshly chopped parsley before serving warm.
