Zucchini Gouda Delight (Print Version)

# Ingredients:

01 - 2 medium tomatoes, cut into ½-inch slices
02 - 2 medium zucchinis, cut into ½-inch rounds
03 - 1 cup shredded or sliced Gouda cheese
04 - 2 garlic cloves, finely chopped
05 - 2 tablespoons of olive oil
06 - 1 teaspoon of dried basil
07 - 1 teaspoon of dried oregano
08 - ½ teaspoon of black pepper
09 - ½ teaspoon of salt
10 - ¼ cup of grated Parmesan cheese
11 - 1 tablespoon of fresh parsley, chopped

# Instructions:

01 - Preheat your oven to 375°F (190°C).
02 - Rinse the zucchinis and tomatoes, then slice them both into even ½-inch pieces.
03 - Mix the zucchini slices with the olive oil, oregano, basil, garlic, salt, and black pepper in a large bowl.
04 - Grease a baking dish, and arrange the zucchini slices flat. Layer a piece of Gouda cheese on each, then place a tomato slice on top.
05 - Dust the top with Parmesan cheese (optional) and extra black pepper.
06 - Put it in the oven for 20–25 minutes until the cheese is bubbling and nicely melted.
07 - Once baked, take it out and sprinkle with freshly chopped parsley before serving warm.
