Grab an 8x8 inch (20x20 cm) baking pan, line it with parchment paper, and leave some hanging over the edges for easy lifting.

Toss the dates into a food processor and pulse them until you get a sticky, paste-like texture.

Throw in the shredded coconut, almond flour, key lime juice, melted coconut oil, and lime peel into the food processor.

Scoop the mix into your pan and press it down super firmly to create an even surface.

Cover the pan and pop it into the fridge for at least 2 hours so it can firm up nicely.
