Spinach Tortellini Shrimp (Print Version)

# Ingredients:

01 - 9 oz refrigerated or fresh cheese tortellini
02 - 1 lb shrimp, deveined and peeled
03 - 2 tsp blackened or Cajun seasoning
04 - 1 tbsp unsalted butter
05 - 1 tbsp olive oil
06 - 3 garlic cloves, finely minced
07 - 2 cups chopped fresh spinach
08 - 1 cup heavy whipping cream
09 - 1/2 cup Parmesan cheese, grated
10 - Salt and pepper, as you like

# Instructions:

01 - Boil the tortellini following the packet’s instructions, then drain it well and keep it aside.
02 - Coat the shrimp thoroughly with blackened seasoning. Heat olive oil in a large pan over medium-high. Cook the shrimp for about 2-3 minutes on each side until they look golden. Take them out and set them aside.
03 - Melt the butter in the same pan, then sauté the minced garlic for about a minute. Pour in the cream and let it simmer on low.
04 - Toss in the spinach and cook until it softens. Stir in the Parmesan until the sauce is silky, then sprinkle in some salt and pepper to taste.
05 - Fold the tortellini into the creamy sauce. Put the shrimp on top and serve while warm.
